This is very soft dough; be sure to keep it well chilled and allow plenty of room on the cookie sheet for the dough to spread.

Ingredients

  • 1 cup packed dark brown sugar
  • ¾ cup granulated sugar
  • ½ cup vegetable shortening
  • 2 large eggs
  • ¼ cup molasses
  • ½ tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1½ tsp. ground ginger
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • ¼ tsp. ground white pepper
  • ¼ tsp. ground cloves
  • ½ cup turbinado sugar

Directions

  • Cream together sugars and shortening until fluffy. Add eggs, molasses, and vanilla.
  • Whisk together flour, baking soda, baking powder, ginger, salt, cinnamon, pepper, and cloves; add to shortening mixture. Blend well. Chill overnight.
  • Preheat oven to 300°F. Line 2 large baking sheets with parchment paper.
  • Roll dough ⅛" thick on heavily floured surface. Cut with floured cookie cutters and transfer to prepared baking sheets. Sprinkle with turbinado sugar.
  • Bake 15–18 minutes.
