Gingered Mashed Sweet Potatoes
This colorful mash is a tasty alternative to mashed potatoes.

- 4 medium sweet potatoes (1 1⁄2 lbs.)
- 1⁄4 cup whole milk
- 2 Tbsp. butter
- 1 tsp. ground ginger
- 1 tsp. salt
- Peel and quarter the sweet potatoes and cook in boiling salted water until tender, about 20 minutes. Drain and return to the pan.
- In a small saucepan, heat the milk, butter, and ground ginger; pour over the cooked sweet potatoes, add salt, and mash with a potato masher. Serve hot.
