Glazed Baby Carrots with Thyme
When carrots are glazed with butter and herbs, they are one of the best side dish recipes.

- 2 lbs. small carrots, peeled and trimmed
- 2 Tbsp. butter
- 1⁄2 tsp. salt
- 1⁄8 tsp. pepper
- 1 Tbsp. fresh thyme
- Place carrots in large saucepan and add water to cover. Cover pan and bring to a boil. Reduce heat to low and simmer until tender, about 8 to 10 minutes.
- Drain all but 3 tablespoons water from the pan and add the butter. Bring to a boil over medium high heat. Boil, shaking the pan frequently, until water evaporates and carrots are coated with butter, about 5 to 8 minutes. Add salt, pepper, and thyme, toss to coat, and serve immediately.
