Glazed carrots make an excellent side dish for family dinners and special occasions. They also add a bit of color to the spread.

- 2 Tbsp. olive oil
- 1 Tbsp. minced garlic
- 2 tsp. minced ginger
- 4 small carrots, peeled and thinly sliced on the diagonal into 1⁄2-inch slices
- 1⁄4 tsp. cayenne pepper
- 1⁄2 cup chicken broth
- 2 Tbsp. brown sugar
- Heat a wok or skillet over medium-high heat until it is nearly smoking. Add the oil. When the oil is hot, add the garlic and ginger and stir-fry for 10 seconds.
- Add the carrots. Stir-fry for 1 to 2 minutes. Stir in the cayenne pepper. Add the chicken broth and the brown sugar. Bring to a boil. Cover and cook for 4 minutes.
- Uncover and cook, stirring, until the carrots are tender but still crisp and nicely glazed with the broth and sugar mixture, which has been reduced (total cooking time is about 8 minutes). Serve hot.
