Glazed carrots make an excellent side dish for family dinners and special occasions. They also add a bit of color to the spread.

Serves: 4

  • 2 Tbsp. olive oil
  • 1 Tbsp. minced garlic
  • 2 tsp. minced ginger
  • 4 small carrots, peeled and thinly sliced on the diagonal into 1⁄2-inch slices
  • 1⁄4 tsp. cayenne pepper
  • 1⁄2 cup chicken broth
  • 2 Tbsp. brown sugar

  • Heat a wok or skillet over medium-high heat until it is nearly smoking. Add the oil. When the oil is hot, add the garlic and ginger and stir-fry for 10 seconds.
  • Add the carrots. Stir-fry for 1 to 2 minutes. Stir in the cayenne pepper. Add the chicken broth and the brown sugar. Bring to a boil. Cover and cook for 4 minutes.
  • Uncover and cook, stirring, until the carrots are tender but still crisp and nicely glazed with the broth and sugar mixture, which has been reduced (total cooking time is about 8 minutes). Serve hot.
