Gluten-Free BLT

Not a fan of tomato? Try substituting finely chopped red bell pepper. For extra flavor, mix a few pieces of finely chopped red onion with the mayonnaise.

  • 2 slices bacon
  • 2 lettuce leaves
  • 2 slices gluten-free bread
  • 1 Tbsp. mayonnaise
  • 4 slices tomato


  • Cook the bacon in a frying pan or broiler until crisp. Drain the bacon slices on paper towels and cut into strips about 3 inches long.
  • Wash the lettuce leaves and drain thoroughly. Break into bite-size pieces. Toast the bread.
  • Spread the mayonnaise on one side of each slice of bread. Lay the bacon strips horizontally on 1 slice of bread on top of the mayonnaise. Lay the tomato slices on top, and then the lettuce. Close the sandwich and cut in half.
