- 2 slices bacon
- 2 lettuce leaves
- 2 slices gluten-free bread
- 1 Tbsp. mayonnaise
- 4 slices tomato
- Cook the bacon in a frying pan or broiler until crisp. Drain the bacon slices on paper towels and cut into strips about 3 inches long.
- Wash the lettuce leaves and drain thoroughly. Break into bite-size pieces. Toast the bread.
- Spread the mayonnaise on one side of each slice of bread. Lay the bacon strips horizontally on 1 slice of bread on top of the mayonnaise. Lay the tomato slices on top, and then the lettuce. Close the sandwich and cut in half.
