Gluten-Free French Toast Casserole
This is an easy way to make French toast for a crowd. No standing over the griddle, making each piece one by one. Gluten-free cinnamon raisin bread is recommended for this recipe, but you can use plain bread if you prefer.

- 1 loaf gluten-free cinnamon raisin bread, sliced diagonally
- 6 large eggs
- 1 cup whole milk
- 1 tsp. salt
- 1 tsp. ground nutmeg
- 1 tsp. ground cinnamon
- 2⁄3 cup vegetable oil
- 1 tsp. vanilla extract
- 1⁄2 cup granulated sugar
- Grease a 9-by-13-inch baking dish and layer the bread in the dish.
- In a large bowl, combine the eggs, milk, salt, nutmeg, cinnamon, oil, vanilla, and sugar. Pour the egg mixture over the bread. Cover and refrigerate overnight.
- The next morning, heat the oven to 450°F and bring the casserole to room temperature. Bake for 25 to 30 minutes or until set. Serve with maple syrup.
