Gluten-Free French Toast Casserole

This is an easy way to make French toast for a crowd. No standing over the griddle, making each piece one by one. Gluten-free cinnamon raisin bread is recommended for this recipe, but you can use plain bread if you prefer.

Ingredients

  • 1 loaf gluten-free cinnamon raisin bread, sliced diagonally
  • 6 large eggs
  • 1 cup whole milk
  • 1 tsp. salt
  • 1 tsp. ground nutmeg
  • 1 tsp. ground cinnamon
  • ⅔ cup vegetable oil
  • 1 tsp. vanilla extract
  • ½ cup granulated sugar

Directions

  • Grease a 9" × 13" baking dish and layer the bread in the dish.
  • In a large bowl, combine the eggs, milk, salt, nutmeg, cinnamon, oil, vanilla, and sugar. Pour the egg mixture over the bread. Cover and refrigerate overnight.
  • The next morning, heat the oven to 450°F and bring the casserole to room temperature. Bake for 25–30 minutes or until set. Serve with maple syrup.
