Gluten-Free Lemon-Almond Bread
Serve this delicious lemon bread with lemon curd, jam, or even clotted cream. It freezes well too! Perfect for company or yourself with hot tea.

- 1 cup butter, room temperature
- 1 cup granulated sugar
- 1 cup almond flour
- ½ cup coconut flour
- 5 large eggs, beaten
- Grated rind and juice from 1 lemon
- Preheat oven to 350°F. Grease a 9" × 5" loaf pan with butter.
- Combine all the ingredients in a mixing bowl and mix thoroughly. Pour into the prepared loaf pan. Bake for 35–45 minutes or until golden brown and firm to the touch. Cool on a wire rack.
