Gluten-Free Lemon-Almond Bread

Ingredients

  • 1 cup butter, room temperature
  • 1 cup granulated sugar
  • 1 cup almond flour
  • ½ cup coconut flour
  • 5 large eggs, beaten
  • Grated rind and juice from 1 lemon

Directions

  • Preheat oven to 350°F. Grease a 9" × 5" loaf pan with butter.
  • Combine all the ingredients in a mixing bowl and mix thoroughly. Pour into the prepared loaf pan. Bake for 35–45 minutes or until golden brown and firm to the touch. Cool on a wire rack.
