Golden Sautéed Diver Scallops
This recipe calls for caramelizing the scallops, which adds a wonderful depth of flavor. You’ll find lots of excuses to serve these.

- ½ cup corn flour
- 2 Tbsp. sugar
- 1 tsp. salt
- ½ tsp. white pepper
- 1½ lbs. large diver scallops, each about 2" across
- 2 Tbsp. unsalted butter
- 2 Tbsp. olive oil
- 2 Tbsp. chili oil
- On a sheet of waxed paper, mix the flour, sugar, salt, and pepper. Roll the scallops in the flour mixture.
- Heat the butter and oil over medium-high heat. Add the scallops and watch them. They will brown quickly. Cook for 3 minutes per side. Top with chili oil to serve.
