Golden Sautéed Diver Scallops

This recipe calls for caramelizing the scallops, which adds a wonderful depth of flavor. You’ll find lots of excuses to serve these.

  • ½ cup corn flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • ½ tsp. white pepper
  • 1½ lbs. large diver scallops, each about 2" across
  • 2 Tbsp. unsalted butter
  • 2 Tbsp. olive oil
  • 2 Tbsp. chili oil


  • On a sheet of waxed paper, mix the flour, sugar, salt, and pepper. Roll the scallops in the flour mixture.
  • Heat the butter and oil over medium-high heat. Add the scallops and watch them. They will brown quickly. Cook for 3 minutes per side. Top with chili oil to serve.
