Granola Breakfast Parfait
Sneak some healthy flax meal into your morning meal by adding it to a layered soy yogurt and granola parfait. If you don’t have fresh fruit on hand, try adding some dried fruit, such as chopped dried apricots or pineapple. You could also replace the flax meal with wheat germ.

- 2 containers (6 oz.) plain soy yogurt
- 2 Tbsp. agave nectar
- 1⁄4 cup flax meal
- 1⁄2 cup granola
- 1⁄4 cup sliced strawberries
- 1⁄4 cup blueberries
- In a small bowl, combine the yogurt and agave nectar. In another small bowl, combine the flax meal and granola.
- In two serving bowls, place a few spoonfuls of yogurt mixture, then a layer of granola mixture. Top with a layer of fruit and continue layering until ingredients are used up. Serve immediately.
