Granola Cookies
These nutritious cookies make a great breakfast on the go if you leave out the chocolate chips.

Ingredients
- 1⁄2 cup packed brown sugar
- 1 tsp. vanilla extract
- 1⁄4 cup honey
- 1⁄4 cup unsalted butter
- 3 cups granola
- 1⁄2 cup bran flakes cereal
- 1⁄4 cup raisins
- 1⁄4 cup dried cranberries
- 1⁄2 cup chopped almonds
- 3⁄4 cup chocolate chips
- 1⁄2 cup shredded coconut
Directions
- Grease 13-by-9-inch pan. Set aside.
- On medium heat, bring brown sugar, vanilla, honey, and butter to a boil. Lower heat; simmer and stir 2 minutes, until sugar is completely dissolved.
- Cool completely.
- Mix remaining ingredients together in a large bowl. Pour brown sugar mixture over all; stir to coat evenly. Press into pan firmly. Refrigerate 3 hours. Cut into bars.
