Granola Cookies

These nutritious cookies make a great breakfast on the go if you leave out the chocolate chips.

Ingredients

  • 1⁄2 cup packed brown sugar
  • 1 tsp. vanilla extract
  • 1⁄4 cup honey
  • 1⁄4 cup unsalted butter
  • 3 cups granola
  • 1⁄2 cup bran flakes cereal
  • 1⁄4 cup raisins
  • 1⁄4 cup dried cranberries
  • 1⁄2 cup chopped almonds
  • 3⁄4 cup chocolate chips
  • 1⁄2 cup shredded coconut

Directions

  • Grease 13-by-9-inch pan. Set aside.
  • On medium heat, bring brown sugar, vanilla, honey, and butter to a boil. Lower heat; simmer and stir 2 minutes, until sugar is completely dissolved.
  • Cool completely.
  • Mix remaining ingredients together in a large bowl. Pour brown sugar mixture over all; stir to coat evenly. Press into pan firmly. Refrigerate 3 hours. Cut into bars.
