Grapefruit and Star Anise Millet Porridge
The warming spice of star anise combined with the tartness of grapefruit marries perfectly with creamy millet. Serve with apple slices topped with almond butter for a lovely breakfast.

- 1 cup cooked millet
- 1 cup unsweetened almond milk
- ½ tsp. kosher salt
- 1 star anise pod
- ¼ cup chopped grapefruit segments
- Combine the cooked millet, almond milk, salt, and star anise in a small saucepan over medium heat. Bring to a very light boil, and reduce heat to medium-low. Simmer for 10 minutes, or until very creamy. Stir frequently. Remove star anise.
- Top with grapefruit, and serve immediately.
