Greek Feta Salad

Ingredients

  • 3 Tbsp. lemon juice
  • ½ cup olive oil
  • ½ Tbsp. dried Mediterranean spice blend
  • ¼ tsp. salt
  • ⅛ tsp. red pepper flakes
  • 2 cups sliced cucumber
  • ¼ cup thinly sliced red onion
  • ½ cup pitted kalamata olives, cut into quarters
  • 2 cups mixed greens
  • ½ cup halved cherry tomatoes
  • 1 large tomato, cut into wedges
  • 1 yellow bell pepper, seeded and sliced
  • 4 oz. feta cheese, cut into 4 slices
  • 1 tsp. ground black pepper

Directions

  • In a large bowl, whisk the lemon juice, olive oil, Mediterranean spice blend, salt, and red pepper flakes. Add the vegetables and toss until evenly coated. Divide evenly among 4 chilled salad plates. Top with feta cheese and freshly ground black pepper.
