Green Beans Gremolata

Ingredients
- 1⁄2 pound green beans, trimmed
- 4 tablespoons lemon juice (plus, zest from one lemon)
- 2 tablespoons Italian parsley, chopped
- 2 tablespoons Simple Truth™ Sliced Raw Almonds, toasted
- 1 tablespoon Simple Truth Organic™ Unfiltered Extra Virgin Olive Oil
- Coarse salt, to taste
- Freshly ground pepper, to taste
Directions
- In medium saucepan over medium-high heat, cover beans with an inch of water. Cook until crisp-tender, about 4 minutes. Drain and immediately add cold water; drain again.
- In large bowl, combine beans with remaining ingredients. Toss to combine and serve.
