Ingredients

  • 1⁄2 pound green beans, trimmed
  • 4 tablespoons lemon juice (plus, zest from one lemon)
  • 2 tablespoons Italian parsley, chopped
  • 2 tablespoons Simple Truth™ Sliced Raw Almonds, toasted
  • 1 tablespoon Simple Truth Organic™ Unfiltered Extra Virgin Olive Oil
  • Coarse salt, to taste
  • Freshly ground pepper, to taste

Directions

  • In medium saucepan over medium-high heat, cover beans with an inch of water. Cook until crisp-tender, about 4 minutes. Drain and immediately add cold water; drain again.
  • In large bowl, combine beans with remaining ingredients. Toss to combine and serve.
