Green Chili Chutney (Hari Mirch Ki Chutney)
This chutney is very spicy and robust. Use as a salad dressing over fresh vegetables. Don’t forget to seed the chilies if you want a milder taste.

- 20 serrano green chilies, stemmed and coarsely chopped
- ½ cup cilantro
- 4 Tbsp. lemon juice
- 1 tsp. sugar
- 1 tsp. salt
- In a blender, blend together all the ingredients to a fine paste. Transfer to a covered container. Refrigerate until needed.
