Green Chili and White Bean Dip
The creaminess of the white beans combined with sweet pepper and tangy green chilies makes this an irresistible appetizer. Serve with crudité.

- 1 can (15.5 oz.) white beans, drained and rinsed
- ½ red bell pepper, roughly diced
- ¼ cup canned green chilies
- ¼ cup chopped cilantro
- 1 scallion, chopped
- ½ tsp. kosher salt
- Place all the ingredients in a food processor fitted with a metal blade. Process until smooth.
- Refrigerate for 1 hour.
