Green Olive Pesto
Spread olive pesto onto bread when making a panini or use it as a topping for bruschetta or pizza.

- 1⁄3 cup pine nuts
- 2 cups pitted green olives
- 2⁄3 cup extra-virgin olive oil
- 2 cloves garlic
- 1⁄4 tsp. salt
- 1⁄4 tsp. black pepper
- In a food processor, chop pine nuts and remove. Add olives and olive oil to food processor and pulse setting until evenly chopped. Add garlic, chopped pine nut, salt, and pepper and continue processing until smooth.
- Remove from food processor and store in refrigerator for up to a week.
