Green Rice Pilaf
This colorful, fragrant, and delicious rice goes great with roasted chicken, grilled fish or lamb.

- 3 Tbsp. butter
- 1 medium onion, finely chopped
- 2 cups long-grain rice
- 3 Tbsp. chopped parsley
- 3 Tbsp. chopped mint
- 3 Tbsp. chopped basil
- 3 1⁄2 cups water
- 1 tsp. salt
- 1 Tbsp. lemon grated lemon zest
- In a large Dutch oven over medium-high heat, melt butter. Add onion; cook stirring often, until translucent, about 5 minutes. Add the rice and stir to coat. Stir in parsley, mint, basil, water, and salt. Cover tightly; increase heat and bring to a boil. Reduce to low and cook until rice is tender and has absorbed all liquid, about 25 minutes.
- Fluff with a fork; stir in lemon zest, cover, and let stand for 10 minutes before serving.
