Green Rice Pilaf

This colorful, fragrant, and delicious rice goes great with roasted chicken, grilled fish or lamb.

Ingredients

  • 3 Tbsp. butter
  • 1 medium onion, finely chopped
  • 2 cups long-grain rice
  • 3 Tbsp. chopped parsley
  • 3 Tbsp. chopped mint
  • 3 Tbsp. chopped basil
  • 3 ½ cups water
  • 1 tsp. salt
  • 1 Tbsp. lemon grated lemon zest

Directions

  • In a large Dutch oven over medium-high heat, melt butter. Add onion; cook stirring often, until translucent, about 5 minutes. Add the rice and stir to coat. Stir in parsley, mint, basil, water, and salt. Cover tightly; increase heat and bring to a boil. Reduce to low and cook until rice is tender and has absorbed all liquid, about 25 minutes.
  • Fluff with a fork; stir in lemon zest, cover, and let stand for 10 minutes before serving.
