Ingredients
- 1⁄4 cup creamy almond butter
- 2 large eggs
- 2 cups baby spinach
- 2 Tbsp. coconut sugar
- 2 Tbsp. whipped coconut cream
- 1⁄2 tsp. chia seeds
- 1⁄2 chopped pistachios
- 1⁄2 cup raspberries
Directions
- Place almond butter, eggs, and spinach in a blender and purée. Fold in coconut sugar.
- Pour batter into a heated waffle iron that has been sprayed with nonstick coconut oil spray. Cook until golden. Remove and top with whipped coconut cream, chia seeds, pistachios, and raspberries. Serve hot.
