Green Smoothie Waffle

  • 1⁄4 cup creamy almond butter
  • 2 large eggs
  • 2 cups baby spinach
  • 2 Tbsp. coconut sugar
  • 2 Tbsp. whipped coconut cream
  • 1⁄2 tsp. chia seeds
  • 1⁄2 chopped pistachios
  • 1⁄2 cup raspberries


  • Place almond butter, eggs, and spinach in a blender and purée. Fold in coconut sugar.
  • Pour batter into a heated waffle iron that has been sprayed with nonstick coconut oil spray. Cook until golden. Remove and top with whipped coconut cream, chia seeds, pistachios, and raspberries. Serve hot.
