Griddled Peppers and Cheddar Sausage

Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, cut into rounds
  • 2 tbsp. olive oil
  • 1 tsp. paprika
  • 1⁄2 tsp. garlic powder
  • 1⁄2 tsp. salt
  • 1⁄4 tsp. pepper
  • 4 cheddar cheese smoked sausages, cut into rounds

Directions

  • Prepare griddle for medium-high heat.
  • In a medium bowl, combine bell peppers, onion, zucchini, olive oil, paprika, garlic powder, salt and pepper. Toss until coated.
  • Place veggies on griddle and cook 15-20 minutes, until browned and tender. Add sausage to the griddle and cook until browned.
  • Serve and refrigerate leftovers.
