Griddled Peppers and Cheddar Sausage

Ingredients
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 zucchini, cut into rounds
- 2 tbsp. olive oil
- 1 tsp. paprika
- 1⁄2 tsp. garlic powder
- 1⁄2 tsp. salt
- 1⁄4 tsp. pepper
- 4 cheddar cheese smoked sausages, cut into rounds
Directions
- Prepare griddle for medium-high heat.
- In a medium bowl, combine bell peppers, onion, zucchini, olive oil, paprika, garlic powder, salt and pepper. Toss until coated.
- Place veggies on griddle and cook 15-20 minutes, until browned and tender. Add sausage to the griddle and cook until browned.
- Serve and refrigerate leftovers.
