Grilled Cheese with Bacon and Tomato
This diner classic is made even better with a panini press.

- 4 slices thick-cut bacon
- 8 slices Cheddar cheese
- 4 slices sourdough bread, all sides buttered
- 4 slices tomato
- Preheat the panini press. Cook bacon on hot press until crisp. Transfer bacon to a plate lines with a paper towel. Wipe press with another paper towel to remove grease.
- Place 2 slices of cheese on the bottom slice of bread. Top with tomato slices, cooked bacon, the 2 remaining slices of cheese, and the other slice of bread. Place on panini press, close lid, and cook for 3 to 5 minutes, or until bread is golden and cheese is melted. Remove from press, cut in half, and serve warm.
