Grilled Cheese with Bacon and Tomato
This diner classic is made even better with a panini press.

- 4 slices thick-cut bacon
- 8 slices Cheddar cheese
- 4 slices sourdough bread, all sides buttered
- 4 slices tomato
- Preheat the panini press. Cook bacon on hot press until crisp. Transfer bacon to a plate lines with a paper towel. Wipe press with another paper towel to remove grease.
- Place 2 slices of cheese on the bottom slice of bread. Top with tomato slices, cooked bacon, the 2 remaining slices of cheese, and the other slice of bread. Place on panini press, close lid, and cook for 3–5 minutes, or until bread is golden and cheese is melted. Remove from press, cut in half, and serve warm.
