Grilled Chicken with Mango Salsa
This salsa increases fiber and turns on taste buds for an otherwise simple chicken dish. The salsa makes an excellent accompaniment to cheese quesadillas or grilled shrimp. You can also up the fiber by serving the salsa with roasted peanuts on the side.

- 1 cup diced mango
- 1⁄2 cup diced red onion
- 1⁄4 bunch cilantro
- 1 Tbsp. lime juice
- 3 tsp. olive oil, divided
- 1 tsp. salt
- 3 lbs. chicken breasts
- 2 tsp. jerk seasoning
- 1 lime, cut in wedges
- Combine the mango and red onion in a large bowl. Chop the cilantro and add it to the bowl with the lime juice, 1 tablespoon olive oil, and 1⁄4 teaspoon of salt.
- Prepare grill. Coat chicken breasts with 2 tablespoons olive oil, remaining salt, and jerk seasoning. Place the chicken on grill. Cook for 5 to 6 minutes per side or until chicken is cooked through. Serve with mango salsa and lime wedges.
