Grilled Corn with Southwestern Spiced Butter
You can grill corn right alongside meats or fish, making it a perfect side dish for a cookout.

- 6 ears of corn, husk and silk removed
- 1⁄4 cup butter, softened
- 1⁄2 tsp. chipotle powder
- 1⁄2 tsp. smoked paprika
- 1⁄4 tsp. salt
- 1⁄4 tsp. ground black pepper
- Prepare and grease grill. Place the corn on the grill, close lid, and roast, turning every 5 minutes, until fully cooked, about 15 to 20 minutes.
- Meanwhile, in a small bowl, mash the spices into the butter with a fork. Brush onto the hot corn.
