Grilled Curried Pork Roast

- 1 pork loin roast (2 lbs.), with 1⁄4-inch fat cap
- 1 Tbsp. garlic powder
- 1 tsp. dried thyme
- 1 tsp. lemon pepper
- 1 Tbsp. curry powder
- 1⁄4 tsp. cumin seeds
- 1⁄4 tsp. salt
- Rinse the pork roast and dry with a paper towel. Using a sharp paring knife, make shallow cuts in a crosshatch pattern in the fat cap of the pork.
- Mix together garlic powder, thyme, lemon pepper, curry powder, cumin seeds, and salt. Rub the mixture into the roast.
- Heat the grill to medium heat. Grill over indirect heat until the internal temperature reaches 140°F, 45 minutes to 1 hour. Remove and let stand for 10 minutes before slicing and serving.
