Grilled London Broil
To maintain the tender texture of the London broil, marinate the meat prior to grilling, cook until medium rare, and cut across the grain into small strips. It is important to let the meat rest after cooking.

- 1 cup dry red wine
- 2 Tbsp. olive oil
- 1 tsp. ground cinnamon
- 1 tsp. ground cumin
- ½ tsp. ground cloves
- ½ tsp. Kosher salt
- ½ tsp. freshly cracked black pepper
- 1½ lbs. London broil
- 1 lb. button mushrooms
- 8 oz. asparagus, trimmed
- Preheat grill. Mix together the wine, 1 tablespoon oil, cinnamon, cumin, cloves, salt and pepper. Coat the meat in the mixture, then grill to desired doneness (about 8 minutes per side for medium-rare). When cooked, let London broil rest for 10 minutes.
- Meanwhile, toss mushrooms and asparagus with remaining oil and grill until just tender.
- Slice meat on a bias and serve with vegetables.
