Grilled Marinated Portobello Mushrooms
Main course mushrooms like these go with anything from summer salads to wintry wild rice dishes. They’re one of the best vegetarian dinners to pair with red wine. If you don’t have a grill, bake the mushrooms on a sheet pan in a 400-degree oven for about ten minutes.

- 4 large portobello mushrooms, stems removed
- 1 cup extra-virgin olive oil
- 1 cup red wine vinegar
- 2 Tbsp. soy sauce
- 1 Tbsp. sugar
- Brush any dirt from the mushrooms, but do not wash them under water. Whisk together the olive oil, vinegar, soy sauce, and sugar. In a shallow dish, pour the marinade over the mushrooms; marinate 10 minutes, turning occasionally.
- Grill 2–3 minutes on each side. Serve whole or sliced.
