Grilled Pineapple with Caramel Coating
Use only fresh pineapple.

- 1⁄4 cup dark corn syrup
- 2 Tbsp. butter
- 1 Tbsp. rum
- 4 thick slices fresh pineapple
- 2 cups vanilla ice cream
- Bring the syrup and butter to a boil. Add the rum.
- Brush the pineapple rounds with the syrup mixture.
- Set grill to low.
- Grill the pineapple rounds until they start to get golden brown. Turn and grill for another few seconds. Serve immediately with ice cream, and drizzle with remaining syrup mixture.
