Grilled Pineapple with Caramel Coating

Use only fresh pineapple.

  • 1⁄4 cup dark corn syrup
  • 2 Tbsp. butter
  • 1 Tbsp. rum
  • 4 thick slices fresh pineapple
  • 2 cups vanilla ice cream


  • Bring the syrup and butter to a boil. Add the rum.
  • Brush the pineapple rounds with the syrup mixture.
  • Set grill to low.
  • Grill the pineapple rounds until they start to get golden brown. Turn and grill for another few seconds. Serve immediately with ice cream, and drizzle with remaining syrup mixture.
