Grilled Pineapple with Cinnamon
As the pineapple heats on the grill, the sugars in the fruit caramelize and brown, adding a wonderful rich flavor. Serve it with ice cream and caramel or pineapple ice cream topping.
Serves: 6Hands-on: 15 minutesTotal: 15 minutesDifficulty: Easy
- 1 fresh pineapple
- ½ cup brown sugar
- ¼ cup orange juice
- 1 Tbsp. butter, melted
- ½ tsp. cinnamon
- ⅛ tsp. cayenne pepper
- 1 pint vanilla ice cream

- ½ cup flaked coconut
- Twist leaves off top of pineapple. Cut off skin, making sure to remove brown spots or eyes. Cut pineapple into ½" slices. In small bowl, combine remaining ingredients and mix well.
- Prepare and preheat grill. Brush one side of each pineapple slice with some of the brown sugar mixture and place on grill, 4–6" from medium coals.
