Grilled Pineapple with Cinnamon
As the pineapple heats on the grill, the sugars in the fruit caramelize and brown, adding a wonderful rich flavor. Serve it with ice cream and caramel or pineapple ice cream topping.

- 1 fresh pineapple
- 1⁄2 cup brown sugar
- 1⁄4 cup orange juice
- 1 Tbsp. butter, melted
- 1⁄2 tsp. cinnamon
- 1⁄8 tsp. cayenne pepper
- 1 pint vanilla ice cream
- 1⁄2 cup caramel ice cream topping
- 1⁄2 cup flaked coconut
- Twist leaves off top of pineapple. Cut off skin, making sure to remove brown spots or eyes. Cut pineapple into 1⁄2-inch slices. In small bowl, combine remaining ingredients and mix well.
- Prepare and preheat grill. Brush one side of each pineapple slice with some of the brown sugar mixture and place on grill, 4 to 6 inches from medium coals. Grill, uncovered, for 8 to 9 minutes, turning once and brushing frequently with brown sugar mixture, until pineapple is heated and grill marks are golden brown.
- Serve pineapple with ice cream, topping, and coconut.
