Grilled Pineapple with Cinnamon

As the pineapple heats on the grill, the sugars in the fruit caramelize and brown, adding a wonderful rich flavor. Serve it with ice cream and caramel or pineapple ice cream topping.

  • 1 fresh pineapple
  • 1⁄2 cup brown sugar
  • 1⁄4 cup orange juice
  • 1 Tbsp. butter, melted
  • 1⁄2 tsp. cinnamon
  • 1⁄8 tsp. cayenne pepper
  • 1 pint vanilla ice cream
  • 1⁄2 cup caramel ice cream topping
  • 1⁄2 cup flaked coconut


  • Twist leaves off top of pineapple. Cut off skin, making sure to remove brown spots or eyes. Cut pineapple into 1⁄2-inch slices. In small bowl, combine remaining ingredients and mix well.
  • Prepare and preheat grill. Brush one side of each pineapple slice with some of the brown sugar mixture and place on grill, 4 to 6 inches from medium coals. Grill, uncovered, for 8 to 9 minutes, turning once and brushing frequently with brown sugar mixture, until pineapple is heated and grill marks are golden brown.
  • Serve pineapple with ice cream, topping, and coconut.
