Grilled Salmon and Pineapple Foil Pack
This flavorful meal is simple to create and perfect for an easy weeknight dinner.

Ingredients
- 1⁄4 cup butter, melted
- 1⁄4 cup Pure Clover Honey
- 4 large cloves garlic, crushed
- 2 tablespoons lemon juice
- 1 tablespoon fresh Italian parsley, finely chopped
- 2 salmon fillets
- 1 cup pineapple, sliced and halved
Directions
- Heat grill for indirect cooking.
- In a small bowl, combine the butter, honey, garlic, lemon juice and parsley.
- Prepare a foil pack by cutting two 24” long sheets of aluminum foil and folding along the long side to connect the pieces together.
- Place the fillets in the middle of the foil and top with the pineapple slices. Spread the butter mixture on top and pinch the ends of the foil together creating a closed pack.
- Place the foil pack on the grill. Grill for 16 minutes, then remove from grill.
- Serve salmon and pineapple over steamed rice.
- Refrigerate leftovers.
