Grilled Salmon and Pineapple Foil Pack

This flavorful meal is simple to create and perfect for an easy weeknight dinner.

Ingredients

  • 1⁄4 cup butter, melted
  • 1⁄4 cup Pure Clover Honey
  • 4 large cloves garlic, crushed
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh Italian parsley, finely chopped
  • 2 salmon fillets
  • 1 cup pineapple, sliced and halved

Directions

  • Heat grill for indirect cooking.
  • In a small bowl, combine the butter, honey, garlic, lemon juice and parsley.
  • Prepare a foil pack by cutting two 24” long sheets of aluminum foil and folding along the long side to connect the pieces together.
  • Place the fillets in the middle of the foil and top with the pineapple slices. Spread the butter mixture on top and pinch the ends of the foil together creating a closed pack.
  • Place the foil pack on the grill. Grill for 16 minutes, then remove from grill.
  • Serve salmon and pineapple over steamed rice.
  • Refrigerate leftovers.
