Grilled Tomatoes

Sprinkle a little grated Parmesan cheese over the tops as soon as they come off the grill to enhance the tomato and fresh herb flavors.

  • 6 large ripe tomatoes
  • 2 tsp. olive oil
  • 1⁄2 tsp. coarse salt
  • 1⁄2 tsp. freshly ground black pepper
  • 1 Tbsp. fresh oregano


  • Preheat a grill or grill pan to high (grill pan should be almost smoking). Make sure the grill grates are clean and lightly oiled to prevent sticking.
  • Halve the tomatoes crosswise. Lightly brush the tomatoes with the oil. Place, cut-side down, on the hottest part of the grill; grill for 1 minute. Turn the tomatoes, moving them to the edge of the grill or to wherever the heat is reduced. Grill for 3 minutes or until charred. Remove from the grill and season with salt, pepper and fresh oregano. Serve warm or at room temperature.
