Sprinkle a little grated Parmesan cheese over the tops as soon as they come off the grill to enhance the tomato and fresh herb flavors.

- 6 large ripe tomatoes
- 2 tsp. olive oil
- ½ tsp. coarse salt
- ½ tsp. freshly ground black pepper
- 1 Tbsp. fresh oregano
- Preheat a grill or grill pan to high (grill pan should be almost smoking). Make sure the grill grates are clean and lightly oiled to prevent sticking.
- Halve the tomatoes crosswise. Lightly brush the tomatoes with the oil. Place, cut-side down, on the hottest part of the grill; grill for 1 minute. Turn the tomatoes, moving them to the edge of the grill or to wherever the heat is reduced. Grill for 3 minutes or until charred. Remove from the grill and season with salt, pepper and fresh oregano. Serve warm or at room temperature.
