Grilled Vegetables

Ingredients

  • 3 large baking potatoes, cut into 1⁄2-inch slices
  • 2 medium red bell peppers, seeded and chopped
  • 2 medium yellow bell peppers, seeded and chopped
  • 2 large onions, peeled and chopped
  • 1 large zucchini, thickly sliced
  • 2 cups cherry tomatoes
  • 1⁄4 cup olive oil
  • 2 tsp. minced parsley
  • 1⁄4 tsp. salt
  • 1⁄4 tsp. ground black pepper

Directions

  • Toss the vegetables with the oil, parsley, salt, and pepper. Grill in a grill basket until fork-tender.
