Ham and Egg Salad
This salad is a fun way to use up leftover hard-cooked eggs and ham. It makes a great sandwich or a topping for toasted bread or crackers. Make this the evening before so the flavors have a chance to develop.

Ingredients
- 1⁄2 cup mayonnaise
- 1⁄4 cup chopped onion
- 1⁄4 cup chopped celery
- 1⁄2 cup diced ham
- 6 large hard-cooked eggs, peeled and chopped
- 1⁄4 tsp. salt
- 1⁄4 tsp. ground black pepper
- 1⁄4 tsp. paprika
Directions
- In a medium bowl, combine mayonnaise, onion, celery, and ham. Mix well to combine, then add eggs, salt, and pepper and gently fold to incorporate. Cover and chill for at least 4 hours.
- Transfer mixture to serving bowl, sprinkle paprika on top, and serve.
