Hard-Boiled Egg Salad

You can add a little cayenne or Hungarian paprika to add some zip to this traditional recipe.

  • 3 eggs, hard-boiled, peeled, cooled, and chopped
  • 2 Tbsp. minced celery
  • 2 chopped fresh scallions, white and green parts separated
  • 2 Tbsp. mayonnaise
  • 1⁄2 tsp. Dijon mustard
  • Salt and freshly ground black pepper to taste


  • Mix together the eggs, celery, scallion whites, mayonnaise, and mustard in a mixing bowl: stir just until combined. Adjust the salt and pepper to taste. Garnish with the scallion greens and serve chilled.
