Healthier Brownie Muffins

Ingredients

  • 3 cups bran cereal
  • 2¼ cups water
  • 1 package (20.5 oz.) low-fat brownie mix
  • 1½ tsp. baking powder

Directions

  • Preheat oven to 350ºF. Line muffin tin with paper baking cups.
  • In a small bowl, soak cereal in the water for 5 minutes. Then, in a separate and larger bowl, mix soaked cereal, brownie mix, and baking powder till a moist batter forms.
  • Fill up each cupcake cup to the brim. Bake for 25 minutes. Serve with butter.
