Healthy Caramel Popcorn

Fairs and amusement parks sell giant bags of delicious, flavored popcorn. Create this easy popcorn recipe at home for a treat that is just as satisfying and a whole lot healthier.

Ingredients

  • ½ cup unsalted butter
  • ¼ cup honey
  • 1 cup coconut sugar
  • ½ tsp. salt
  • ½ tsp. baking soda
  • 1 tsp. vanilla extract
  • 6 cups popped popcorn

Directions

  • Preheat oven to 250°F.
  • In a small saucepan over medium heat, melt butter and stir in honey, coconut sugar, and salt. Bring to a boil, stirring constantly. Boil for 5 minutes on medium/low heat.
  • Remove from heat. Stir in baking soda and vanilla. Pour mixture over popcorn. Place in large baking dish and bake for 45 minutes.
  • Stir popcorn every 15 minutes. Remove from oven and stir popcorn until cool, or let it cool without stirring for popcorn to clump.
