Healthy Fruit Filling

The carob in this filling can be omitted to vary the flavor. The peaches can be replaced with other fresh fruits in season. Use this as a filling for crepes, to spread on pancakes and waffles, to top oatmeal, or to make healthy sandwich cookies.

  • 2 cups peeled, pitted, and chopped peaches
  • ½ cup pine nuts
  • ¼ cup dates, chopped
  • 1 Tbsp. carob powder


  • In a blender, place the peaches, pine nuts, dates, and carob powder and blend together until smooth.
