Healthy Norwegian Brownies

These blond brownies are chewy, sweet, and nutty—all at the same time.

Ingredients

  • 1⁄3 cup butter
  • 1 1⁄3 cups brown sugar
  • 1⁄4 cup honey
  • 1⁄4 cup orange juice
  • 1 large egg
  • 2 egg whites
  • 2 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 1⁄2 cup whole wheat flour
  • 2 Tbsp. ground flaxseed
  • 1 tsp. baking powder
  • 1⁄4 tsp. salt
  • 1⁄2 cup chopped almonds
  • 1 cup mini chocolate chips

Directions

  • Preheat oven to 350°F. Spray a 9-inch square pan with nonstick baking spray containing flour and set aside.
  • In large bowl, combine butter, brown sugar, honey, and orange juice and mix well. Add egg, egg whites, and vanilla and beat until combined.
  • Stir in flours, flaxseed, baking powder, and salt, then add almonds and chocolate chips. Spread into prepared pan. Bake for 19 to 23 minutes or until brownies are just set. Cool completely, then cut into bars.
