Herbed Pressure Cooker Potatoes

This tasty dish comes together quickly in a pressure cooker.

  • 2 Tbsp. olive oil
  • 2 lbs. new potatoes, scrubbed
  • ¼ cup water
  • ½ cup chopped dill
  • 1½ tsp. salt
  • ¼ tsp. ground black pepper


  • Add the potatoes to a pressure cooker. Pour water, olive oil and dill over the potatoes. Season with salt and pepper. Lock the lid into place and bring to high pressure; maintain pressure for 5 minutes. Remove from the heat and allow pressure to release naturally. With a slotted spoon, transfer potatoes to a serving dish. Serve hot or at room temperature.
