High-Fiber Cherry Oatmeal Bars

A sweet cherry and chocolate filling adds great flavor to these chewy bar cookies.

  • 1 cup quick-cooking oats
  • 1 1⁄2 cups regular oats
  • 1⁄2 cup brown sugar
  • 1⁄3 cup oat bran
  • 2 Tbsp. ground flaxseed
  • 1 tsp. ground cinnamon
  • 1 cup whole wheat pastry flour
  • 1⁄4 tsp. salt
  • 1⁄2 tsp. baking soda
  • 1⁄3 cup honey
  • 1⁄3 cup applesauce
  • 1 large egg
  • 1⁄3 cup vegetable oil
  • 1 1⁄2 tsp. vanilla extract
  • 1⁄2 cup chopped walnuts
  • 1 cup cherry preserves
  • 1 cup chopped sweet cherries
  • 1⁄2 cup mini semi-sweet chocolate chips


  • Preheat oven to 350°F. Spray a 9-by-13-inch baking pan with nonstick baking spray that contains flour and set aside.
  • In large bowl, combine both kinds of oatmeal, brown sugar, oat bran, flaxseed, cinnamon, flour, salt, and baking soda and mix well. In small bowl, combine honey, applesauce, egg, oil, and vanilla and beat until smooth.
  • Add honey mixture to dry ingredients and mix until crumbly. Stir in walnuts. Press half of this mixture into prepared pan. In small bowl, combine preserves, cherries, and chocolate chips. Spread over crust in pan. Top with remaining oat mixture.
  • Bake for 20 minutes or until bars turn light golden brown around the edges. Cool completely, then cut into bars.
