Holiday Breakfast Casserole

Make this fresh and fulfilling breakfast casserole before everyone else wakes up and have it ready before it’s time to open presents on Christmas morning.

  • 1 pound Italian sausage
  • 1 cup onion, chopped
  • 1 cup red bell pepper, chopped
  • 1 1⁄2 cups spinach, chopped
  • 1 cup all-purpose flour
  • 1⁄4 cup Parmesan, grated
  • 1 tablespoon fresh basil, chiffonade, plus more to serve
  • 1⁄2 teaspoon salt
  • 8 large eggs
  • 2 cups milk
  • 1 cup shredded mozzarella cheese


  • Preheat oven to 400°F. Prepare a 3-quart or 4-quart baking dish with nonstick cooking spray.
  • In a medium skillet over medium heat, add the sausage and onion. Cook until the sausage has an internal temperature of 160°F. Add the bell pepper and spinach. Cook until wilted. Transfer to prepared baking dish.
  • In a medium bowl, combine the flour, Parmesan cheese, fresh basil and salt. Add the eggs and milk. Stir to combine. Pour over sausage mixture.
  • Bake 35-40 minutes, until a knife inserted in the center comes out clean. Sprinkle with mozzarella cheese and bake 2 minutes, until cheese is melted.
  • Serve with fresh basil and refrigerate leftovers.
