Homemade Meatballs and Spaghetti

Ingredients

  • 1 can (28 oz.) tomato purée
  • 1 can (12 oz.) tomato paste
  • 1 can (28 oz.) tomato sauce
  • ½ cup grated Parmesan cheese, divided
  • 1 tsp. garlic powder
  • 1 Tbsp. Italian seasoning
  • ¾ tsp. salt, divided
  • ¼ tsp. ground black pepper
  • 2 lbs. meatloaf mix (ground beef, pork, and veal)
  • 2 large eggs, lightly beaten
  • 2 slices soft bread, crumbed
  • 1 small onion, peeled and finely chopped
  • 1 medium potato, peeled and grated
  • 1 lb. spaghetti, cooked and kept warm

Directions

  • Combine tomato purée, tomato paste, tomato sauce, ¼ cup Parmesan cheese garlic powder, Italian seasoning, ½ tsp. salt, and pepper in a large saucepan over medium heat. Bring to a boil; reduce heat to low.
  • In a large bowl, combine meatloaf mix, eggs, bread, onion, potato, and remaining Parmesan and salt, mixing well. Shape into 2" meatballs. Gently drop the raw meatballs into the hot spaghetti sauce. Simmer at least 2 hours, gently stirring occasionally. Serve over spaghetti.
