All you need to make homemade pasta is flour and eggs. Make a dough, knead it, and let it rest before rolling it flat and cutting into strands (the width is up to you!). - 3½ cups all-purpose flour
- 4 extra-large eggs
- In a large bowl or on a clean surface, make a well with the flour. Crack the eggs into the center of the well and whisk gently with a fork, gradually adding flour into the eggs. Once the eggs are fully beaten, use your hands to incorporate the eggs into the flour to form a ball. Knead the dough until it is smooth, adding more flour as necessary to keep dough from being sticky, about 6 minutes. Wrap dough with plastic wrap and let rest for 20 minutes at room temperature.
- Using a rolling pin, roll dough out onto floured surface into ⅛" thickness. Using a knife, cut into long strips at your desired width. Toss strands of dough lightly with flour and cover with plastic wrap or a kitchen towel until you cook them. You can also dry the pasta and store it in the freezer in a plastic bag until needed.
- To cook pasta, bring a large pot of salted water to a boil. Add pasta and cook for 1–2 minutes (a little longer if frozen) or until al dente; drain and serve with your favorite topping.
