Homemade Pasta

All you need to make homemade pasta is flour and eggs. Make a dough, knead it, and let it rest before rolling it flat and cutting into strands (the width is up to you!). Cook it right away or freeze it for another time. Add a simple sauce that lets the texture and flavor of homemade pasta shine through.

  • 3 1⁄2 cups all-purpose flour
  • 4 extra-large eggs


  • In a large bowl or on a clean surface, make a well with the flour. Crack the eggs into the center of the well and whisk gently with a fork, gradually adding flour into the eggs. Once the eggs are fully beaten, use your hands to incorporate the eggs into the flour to form a ball. Knead the dough until it is smooth, adding more flour as necessary to keep dough from being sticky, about 6 minutes. Wrap dough with plastic wrap and let rest for 20 minutes at room temperature.
  • Using a rolling pin, roll dough out onto floured surface into 1⁄8-inch thickness. Using a knife, cut into long strips at your desired width. Toss strands of dough lightly with flour and cover with plastic wrap or a kitchen towel until you cook them. You can also dry the pasta and store it in the freezer in a plastic bag until needed.
  • To cook pasta, bring a large pot of salted water to a boil. Add pasta and cook for 1 to 2 minutes (a little longer if frozen) or until al dente; drain and serve with your favorite topping.
