Mustard seeds are the basis of all prepared mustard. Seeds come from plants that produce black, brown, or yellow seeds.

Makes: 1

  • 2⁄3 cup yellow mustard seeds
  • 1⁄2 tsp. celery seed
  • 1 tsp. salt
  • 2 Tbsp. dry white wine
  • 2 Tbsp. white vinegar
  • 1 Tbsp. honey

  • Using a mortar and pestle, grind the seeds. You can pulverize them to a powder or leave them coarse, whichever you prefer. Place the ground seeds or powder in a bowl. Add the celery seeds and the salt. Add the wine, vinegar, and honey, whisking vigorously. Depending on the fineness of the seeds (powder will take more liquid than coarse), you may need to whisk in more liquid. Taste to adjust for seasonings.
