Honey Lime Shrimp

Donʼt let shrimp marinate for more than 10 minutes as it will actually start cooking in the lime juice because of the citric acid.

Ingredients

  • 2 Tbsp. lime juice
  • 2 Tbsp. rice vinegar
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. honey
  • 2 cloves garlic
  • ¼ tsp. hot pepper flakes
  • ¼ tsp. salt
  • ⅛ tsp. ground black pepper
  • ¼ cup olive oil
  • 12 jumbo shrimp (½ lb.), peeled and deveined

Directions

  • In a medium bowl, whisk together the lime juice, rice vinegar, mustard, honey, garlic, hot pepper flakes, olive oil, salt, and pepper. Toss in the shrimp and marinate for about 10 minutes.
  • Preheat the panini press. Pour contents of bowl on panini press. Close lid and cook for 2–4 minutes.
  • Remove from press and serve.
