Honey Peanut Butter for Canning
Try a little vanilla in this recipe for a nice twist. You can also change the base nut to anything you want.

- 2 cups roasted peanuts
- 2 Tbsp. peanut oil
- 1 cup honey
- 1⁄2 tsp. salt
- Put nuts through a blender or food processor. Add oil to 1 cup of the nuts; mix thoroughly. Add more oil if mixture is not smooth enough. Add honey; mix thoroughly. Add remaining nuts; mix until evenly distributed.
- Pack into clean, hot canning jars, leaving 1 inch headspace. Cap and process in hot-water bath 1 hour.
- When you serve, mix the peanut butter. The peanut butter is best used within 6 months.
