Honey Roasted Almonds

These nuts are amazing in a salad, over homemade ice cream, with Greek yogurt or just by the handful. They store well in airtight containers for an on-the-go snack.

- 1 cup raw almonds
- ¼ cup honey
- 2 Tbsp. coconut oil
- ⅛ tsp. sea salt
- 2 tsp. ground cinnamon
- Set oven to 300F. Line a baking sheet with parchment paper.
- In a small bowl, mix all ingredients together. Spread the mixture onto the baking sheet. It will stick and clump a bit, but that’s okay.
- Roast for 10 minutes; stir the nuts and cook for an additional 5 minutes, or until almonds are bubbly and lightly browned. Cool before serving.
