- ⅓ cup red wine vinegar
- 1 tsp. granulated sugar
- 1 tsp. Dijon mustard
- ½ tsp. salt
- ½ tsp. freshly cracked black pepper
- 1 Tbsp. horseradish
- ½ cup chopped parsley
- ⅔ cup extra-virgin olive oil
- Combine the vinegar, sugar, mustard, salt, and pepper in a container or jar with cover and shake vigorously to combine. Add the horseradish, parsley, and oil and shake until emulsified. Use immediately or refrigerate overnight. Bring to room temperature before using.
