Hot Chili Oil
Hot chili oil makes an excellent dipping sauce for any dish. Use it whenever you want to add heat to your meal.

- 6 red chili peppers
- 1 Tbsp. sesame oil
- 1 cup vegetable oil
- Cut the chili peppers in half and remove the seeds. Chop coarsely. Mix the oils and heat in a wok or heavy skillet over medium heat.
- Add the chopped chili peppers and reduce the heat to low. Cook for about 5 minutes, or until the oil turns red. Cool the oil and strain into a sealed jar. Store in the refrigerator for up to 7 days.
