Hot Southwestern-Style Baby Back Ribs

This method requires the ribs to be prepared with a rub, then grilled after the rub has permeated the meat. Be warned: This is very, very spicy!

  • 1 Tbsp. cayenne pepper
  • 2 tsp. red pepper flakes
  • 1 tsp. ground black pepper
  • 1 tsp. ground cumin
  • 1⁄2 tsp. ground cloves
  • 1⁄2 tsp. ground cinnamon
  • 1⁄2 tsp. ground allspice
  • 1 tsp. dried thyme
  • 2 tsp. salt
  • 1⁄2 cup vegetable oil
  • 6 lbs. baby back ribs


  • Mix together cayenne pepper, black pepper, cumin, cloves, cinnamon, allspice, thyme, and salt in a small bowl. Wearing rubber gloves, rub spice mixture into the meat. Cover and refrigerate overnight.
  • Prepare the grill to medium with plenty of room for indirect heat. Pour oil into a spray bottle.
  • Grill the ribs over indirect heat for 20 minutes per side, spraying with vegetable oil as they cook.
