Hudson Valley Steak Sauce

Born in a camp on a bank of the Hudson River, this sauce does wonders for steaks. It can also be used on fish, lobster, clams, and shrimp.

  • 1 stick butter
  • 3 Tbsp. Worcestershire sauce
  • ½ cup chili sauce
  • 2 drops Tabasco sauce, or to taste
  • Juice of ½ lemon


  • Melt the butter and stir in the rest of the ingredients. Baste the food with the sauce as it grills, preferably over a wood fire.
