Huevos Rancheros Recipe
Huevos Rancheros
Classic huevos rancheros don't usually call for bacon, but it gives this dish a savory boost. This version is also quick and a great option for breakfast or brunch.
Ingredients
- 2 tablespoons olive oil
- 4 6-inch corn tortillas
- 1 cup refried beans
- 2 tablespoons green chilies, mild
- 4 large eggs
- salt and freshly ground pepper
- 1 cup queso cheese, coarsely grated
- 8 slices bacon, cooked and crumbled
- 1⁄2 cup salsa, fresh
Directions
- Heat oil in a skillet. Fry tortillas one at a time until firm, but not browned. Drain on paper towels, keeping oil in skillet.
- Meanwhile, in a small saucepan, heat refried beans, chili powder, cumin and green chilies over medium heat and keep warm.
- Add more oil to skillet if tortillas have absorbed it all. Return to medium heat, add eggs, and fry until done to your liking.
- Divide tortillas among 4 plates and spread each with a layer of beans. Top with cheese, fried egg, salt and pepper to taste, crumbled bacon and salsa.
